Raw Papaya Salad


Today is the World Diabetes Day and I would like to talk about this chronic disease. Diabetes occurs when the pancreas does not produce enough insulin or when the body cannot effectively use the insulin it produces.

There are two types of Diabetes:

Type I Diabetes: Also known as Insulin dependent Diabetes. This is due to the lack of insulin production.

Type II Diabetes: Also known as Non-Insulin dependent. This is caused due to body's ineffective use of insulin

Gestational Diabetes: This is Hyperglycemia commonly found during pregnancy.

Though diabetes being a life long disease, it can be kept under good control by maintaining a healthy diet. Whatever the type of diabetes, diet plays an important role. Healthy eating is based on 3 principles : - Balance, Moderation and Variety.

In diabetes, the ability to use, store and retrieve the food fuels (Carbohydrates, Proteins and Fats) is impaired. Therefore, by balancing the diet and correlating to the level of activity and the level of insulin (either injected or secreted by the body), we can formulate a meal plan for every diabetic.

Every diabetic might have a different diet plan according to their type of diabetes and the level of blood sugar. But there are some common dishes, fruits and vegetables they all can have. A diabetic diet is considered as a well balanced diet, and is beneficial for everyone. Along with the regular meals, a diabetic person should intake small frequent feeds. It is very important to take the meals in regular timings. Along with a nutritious diet, a diabetic person should also do exercises regularly.


10 Golden Rules for Diabetic Diet

1. Avoid all sugar products like soft drinks, ice creams, candy and cookies provided they are made with artificial sweetener.
2. Eat whole fruit instead of juices.
3. Begin each meal with a raw vegetable salad.
4. Make a light snack of assorted sprouts.
5. Cut off all deep fried foods from your diet.
6. Never skip a meal.
7. Reduce alcoholic beverages.
8. Include high fibre foods.
9. Reduce salt intake.
10. Steam or boil vegetables rather than fry.



Eat food, fruits, vegetables etc which are low in Glycemic Value. You can check Glycemic Index to know more about it.


Diabetes



Now-a-days many people are diabetic. It can be due to the life style, stress and the eating habit. So be very careful in what you eat, avoid stress and do exercises regularly. Try to add more proteins in your diet. Eat more sprouts, salads and fibre rich food.

Raw papaya is very good for diabetics. You can make a salad out of it and have it before lunch, dinner or between meals. Its very easy to prepare and is served cold.




Ingredients

2 tsp Green chilli (crushed)
2 tsp Sugar substitute (optional)
1 tsp Tamarind pulp
1 tsp Chilli powder
2 tsp Soya sauce (optional)
2 tsp Lemon juice
2 tbsp Coriander leaves (finely chopped)
Salt to taste
3 cups Raw papaya (grated)
3/4 cup Tomatoes (thinly sliced)
2 tbsp Peanuts (roasted and crushed)


Method

  • In a mortar, put green chilli, sugar substitute, tamarind pulp, chilli powder, soya sauce, lemon juice, coriander leaves and salt. Pound it into a coarse paste using the pestle. You can use a mixer to do this. Keep this aside.
  • Put the grated raw papaya in ice cold water for half an hour. This is done to make it crisp.
  • Drain and wrap in a muslin cloth and keep in the refrigerator till it is ready to use.
  • Just before serving, combine all the ingredients along with the sliced tomatoes and crushed peanuts, in a big bowl and toss well.
  • Serve immediately.




* I usually take the quantity of the ingredients as per my taste. So you can always adjust the spices as per your taste*

Mango Carrot Salad






This is a simple and tasty salad which my mother makes very frequently at home. This is her innovation and i must say that the flavours used in this dish is so simple, balanced and just perfect.





It has a tangy, sour and sweet taste and iam sure that anyone who tastes this salad will be a fan of it. I love to have this salad along with fried fish. It tastes amazing. Some times i love to eat it just like that. :) I would suggest you all to try this dish at least once and enjoy its taste. It is healthy too, so no worries..

A very simple dish which can be prepared easily with the ingredients available at your home. Even your kids can make it for you :)






Ingredients

1/2 cup Mango (grated, check the notes*)
4 - 5 tbsp Coconut (grated)
2- 3 Green chilli (finely chopped)
1/4 cup Carrot (grated)
4 - 5 tbsp Onion (finely chopped)
1 tbsp Ginger (grated or finely chopped) 
1 tbsp Coriander leaves (finely chopped)
1 tbsp Olive oil
Salt to taste
1 tbsp Vinegar


Method
  • Take a bowl and add mango, carrot, green chilli, coconut, onion, coriander leaves and ginger. Mix well using your hands.
  • Now add salt, olive oil and vinegar. Mix again.
  • Serve it along with any non-veg dish or enjoy it with steamed rice.


Note:
  1. The mango used in this dish should be a medium ripe one ie. it should not be too ripe and not too raw. If you cant get a medium ripe mango, try using a raw one. 
  2. Mix all the ingredients using your hands, so that everything gets combined properly.

Boondi Raita


This is a simple raita which can be served as a side dish for parathas, pulav or biriyani. You can prepare this raita in two ways. Either by soaking the boondis in water or by using without soaking. If you are making boondi raita without soaking the boondis, then add the boondis only when it is to be served. So the boondis will remain crunchy.

Boondi Raita




Ingredients

1/2 cup Boondi
1 cup Curd
Salt to taste
1/2 tsp Red chilli powder
1 Green chilli (finely chopped)
2 pinch Cumin powder
2 tbsp Coriander leaves



Method

  • Soak boondis in water for about 3 minutes. After 3 minutes, squeeze out the water and keep aside.
  • In a bowl, beat curd till light and smooth. It should be not too runny or too thick. Adjust by adding water.
  • Add salt, green chilli and red chilli powder to it. Mix well. Now add the soaked boondis and coriander leaves.
  • Mix well. Garnish with little red chilli powder and cumin powder.
  • Serve it chilled or at room temperature with parathas, pulav or biriyani.

Beetroot Raita


This is a simple raita, made with Beetroot. It can be served with paratha, naan or any rice dishes. The colour of the dish itself is very attractive that no body can resist it, especially kids...



Beetroot Raita




Ingredients

1 cup Beetroot (grated)
2 cup curd (whisked)
Salt to taste
1 tsp Mustard seed
10 Curry leaves
1 tbsp Oil
1 tbsp Coriander Leaves
2 Green chilli (slit into half)
1/2 tsp Turmeric powder
2 pinch Cumin powder



Method

  • Heat oil in a non stick pan. Add mustard seeds. When they splutter add green chillies and curry leaves.
  • After sometime, add grated beetroot, salt and turmeric powder. Mix well.
  • Cover and cook for sometime till the beetroot is completely cooked.
  • Take off from heat and keep aside to cool.
  • Mean while, whisk curd nicely. Add the cooked beetroot and cumin powder. Adjust salt and mix well.
  • Garnish with coriander leaves and serve at room temperature or cold.

Sprouted Moong Salad


This is a simple, healthy and tasty salad. Sprouted moong has lots of protein and is very good for our health.

Try this simple recipe and iam sure kids would love it.


Sprouted Moong Salad



Ingredients

2 cups Sprouted Moong
1 large Tomato (deseeded and finely chopped)
1 medium Onion (finely chopped)
1 medium Capsicum (finely chopped)
2 nos Green chilli (finely chopped)
Salt to taste
2 tsp Lemon juice
2 tbsp Coriander leaves
1 and 1/2 tsp Chat masala



Method

  • In a bowl, mix sprouted moong, tomato, onion, capsicum and green chilli.
  • Mix well and keep in the fridge for about 1/2 an hour.
  • In the mean time, mix lemon juice, salt and chat masala. This is the dressing for the salad.
  • Take out the sprouted moong mixture and add the dressing.
  • Mix well and serve.

Note: Mix the dressing only when you are going to serve the salad.

Lauki Raita

Ingredients

Lauki (grated) - 200 gms
Curd (wisked) - 2 cups
Oil - 1/2 tbsp
Jeera - 1/2 tsp
Red chilli powder - 1/2 tsp
Asafoetida - a pinch
Salt to taste

Method

1. Put the grated lauki in a deep bowl with some salt. Keep this aside for half an hour.
2. Squeeze the water from the grated lauki and put it into the wisked curd. Mix well.
3. Heat oil in a non stick pan. Add Jeera and when it turns its colour add red chilli powder and asafoetida.
4. Put this into the lauki curd mixture and immediately close the bowl with a lid. This is done to trap all the flavours.
5. After 2 to 3 minutes, take off the lid and add salt to taste. Mix well and serve it with parathas.

Simple Raita

Ingredients

Curd - 1 cup
Cucumber (chopped) - 1/2 cup
Onion (chopped) - 1 small
Green chilli (chopped) - 1 or 2 nos
Jeera powder - 1 tsp
Red chilli powder - 1 tsp
Coriander leaves (chopped) - 1 tbsp
Chat masala - 1 tsp
Salt to taste
Rock salt - 1 tsp

Method

1. Take a deep bowl. Put the curd and beat till light and fluffy.
2. Mix all the ingredients and serve chilled.
3. This is a good and easy side dish with Biriyani or Pulav.
