Cherry Coconut Muffins (No Sugar)


The name says it all.... its a muffin with cherries and coconut flavoured.



You might be thinking... how come muffins are not in a cup cake liner. It so happened that I kept a batch of muffins in the oven and after 10 minutes, power went off. I was tensed as to what to do with the batter. My Gas Oven Tandoor came to my rescue :) Poured rest of the batter in it and baked them at one go. I must say that the cake turned out to be soft and yummy.




Ingredients

2 cups Self Raising Flour (check here for substitute)
125 gms Butter (cold)
1 cup Cherry (pitted)
1 cup Desiccated Coconut
1 cup Coconut Milk
2 tbsp. Milk
1 Egg


Method
  • Cut the cherries into small pieces. Keep this aside.
  • Cut butter into small pieces.
  • In a bowl, add self raising flour and butter. Mix gently using your fingers or put in a food processor and pulse for 30 - 60 seconds till it becomes the consistency of bread crumbs.
  • Into this mixture, add all the rest of the ingredients and mix well using a wooden spoon or silicon spatula till everything is nicely combined.
  • Preheat the oven at 220 degree Celsius.
  • Spoon the batter into cupcake molds and place them in the preheated oven for about 20 minutes or until it is cooked.
  • Once done, take off from the oven and let it cool on a wire rack.
  • Later, Enjoy!!!

Note
  1. You might have noticed that no sugar is added in this recipe. Still the muffin tastes light sweet as we have added cherries in it. If you need the muffins to be more sweet, add about 1/4 cup of sugar in it.
  2. These muffins are best to be packed as snacks for kids.

Savoury Vegetable Oats Muffins



This is a simple and healthy breakfast muffins, perfect for kids who are fussy in eating vegetables. 

Some time back when i saw these muffin recipe in 'Healthy Mange More' (cookery show),  I was amazed and wanted to try it out.... these muffins are not sweet....yes it is savoury..


Thought to give it a try as my husband likes savoury food more than the sweet ones, moreover they are healthy too. A perfect breakfast, snack or lunch box item for kids. I served it with tomato chutney. Its your choice, you can serve them just like that or accompany with a chutney.

Try it out and let me know how it tastes....


Ingredients

3/4 cup Whole Wheat Flour
3/4 cup Oats
1 tbsp Olive Oil
1 cup Vegetables (chopped, boiled, any vegetables of your choice)
1 tsp Red chilli powder
3 tbsp Curd
1/2 cup Tomato puree
1 tsp Fennel seeds
1 tsp dried mixed herbs
1 tsp Baking powder
1/2 tsp Baking soda
Salt to taste
1 tsp Black pepper powder
1/2 cup Water


Method

  • In a bowl, add whole wheat flour, oats, red chilli powder, fennel seeds, dried mixed herbs, baking powder, baking soda, salt and black pepper powder. Mix well.
  • Pre heat the microwave oven in convection mode at 180 degree Celsius.
  • Add olive oil, boiled vegetables, curd, tomato puree and water into the bowl. Mix well till everything combined properly.
  • Pour the batter into the muffin molds and place them in the pre heated oven at 180 degree Celsius for 10 - 20 minutes.
  • After 10 minutes insert a tooth pick in the center of the muffin to check whether they are cooked or not. If not cooked, bake it again till done.
  • Once done, serve it hot.

Banana Chocolate chip Muffins





This is an egg less, butter less and healthy treat for your family. These muffins are absolutely healthy as bananas, oats and wheat flour are used. 


My favourite Lazy Cake is a big hit in our family. It is a sure shot cake recipe and my first baked cake. Even that cake is made with banana. 


 
I always wanted to try out muffins and due to some reason or the other, i usually end up making cup cakes or cakes. So this time, i made up my mind and successfully baked these healthy goodness.


These muffins can be packed as a snack for your kids and i am sure they would love it, as my daughters did. They are packed with the goodness of bananas (gives us energy), oats (gives fibre) and more over i included whole wheat flour also. Isn't it great...A perfect start for a beautiful day!!





Enjoy making them and of course munching on these goodness....




Ingredients

1 cup Whole Wheat flour
1 cup Maida/All purpose flour
1/2 cup Sugar
1/2 cup Oats
3/4 tsp Baking Powder
3/4 tsp Baking Soda
1/4 tsp Salt
3/4 cup Chocolate Chips
1/3 cup Canola oil or Vegetable oil
3 Banana (ripe)


Method
  • Mash the banana's into a smooth paste. You can either use a potato masher or electric beater or just your hands.
  • Add oil and sugar into it. Use an electric beater and beat them till the sugar is completely dissolved and everything is combined properly.
  • Pre-heat oven in convection mode at 200 degree Celsius.
  • In another bowl, mix whole wheat flour, maida, salt, oats, baking powder and baking soda.
  • Put this flour mixture into the banana mix slowly. Mix well using a wooden spoon.
  • Add the chocolate chips into the batter and mix nicely. If you feel that the batter is bit thick, add in little milk.
  • The batter will not look like the normal cake or cup cake batter. The muffin batter will be little thick. So not to worry.
  • Spoon the batter into the muffin cup about 3/4th full. 
  • Keep the tray in the preheated oven for about 18 to 20 minutes.
  • Once done, take off from the oven and let it cool in a wire rack.
  • Enjoy these yummy and healthy treats !!!

 Note:
  1. Sprinkle little chocolate chips in the top of each muffins before placing them in the oven.
  2. You can make the muffins by using only maida. For a bit of healthy twist, i halved the quantity of maida in the recipe.
  3. You can increase the amount of sugar, if you feel that the banana that you are adding is not very sweet.
