Lauki Raita


Lauki (grated) - 200 gms
Curd (wisked) - 2 cups
Oil - 1/2 tbsp
Jeera - 1/2 tsp
Red chilli powder - 1/2 tsp
Asafoetida - a pinch
Salt to taste


1. Put the grated lauki in a deep bowl with some salt. Keep this aside for half an hour.
2. Squeeze the water from the grated lauki and put it into the wisked curd. Mix well.
3. Heat oil in a non stick pan. Add Jeera and when it turns its colour add red chilli powder and asafoetida.
4. Put this into the lauki curd mixture and immediately close the bowl with a lid. This is done to trap all the flavours.
5. After 2 to 3 minutes, take off the lid and add salt to taste. Mix well and serve it with parathas.
