Masala Kumbh (Mushroom)




My daughter is a big fan of mushrooms. Whenever i make any curry with mushrooms, i don't have to be after her to finish her rotis. I can see her enjoying her rotis with her favourite curry. "Happy mother" isn't it? I know many of you might have felt the same when your kid is a fussy eater and is very difficult to make them eat food.






This is a perfect curry which you can make for your kids. You can make this curry as a filling for sandwiches or wraps.

Ingredients

600gms Button Mushrooms (cut into bite size pieces)
8 Dry red chilli
3 tsp Coriander seeds
1 tbsp Oil
1 tsp Cumin seeds
2 Onion (medium, sliced)
3 tsp Garlic paste
4 Tomatoes (large, pureed)
Salt to taste
4 Green chilli (finely chopped)
2 inch Ginger (finely chopped)
1/2 cup Coriander leaves (finely chopped)
2 tsp Garam masala powder


Method
  • Dry roast, coriander seeds and dry red chilli. Crush them into a coarse powder. Keep this aside.
  • In a non stick pan, heat oil. Add cumin seeds. When they splutter, add onion and garlic paste.
  • Stir fry for 1 minute.
  • Now add the crushed powder which we had made earlier.
  • Stir fry for sometime. Now add tomato puree and salt. Mix well.
  • Let it simmer till the oil start to leave the masala mixture. 
  • Now add ginger and green chilli. Mix well.
  • Stir fry for 1 minute.
  • Now add the mushroom pieces and mix well. Adjust salt.
  • Let it cook for about 8 - 10 minutes.
  • When the mushrooms are nicely cooked, add garam masala powder. Mix well.
  • Now add coriander leaves.
  • Mix well and serve it hot with roti or naan.






* I usually take the quantity of the ingredients as per my taste. You can adjust the spices as per your taste*
