Spicy Bhindi

Ingredients

Bhindi - 250 gms small sized
Oil - 4 tbsp
Small Onions (shallots) - 20 to 25 nos
Coriander seeds - 2 tsp
Jeera - 1 tsp
Salt to taste
Red chillies - 7 to 8 nos
Peanuts (roasted and peeled) - 1/4 cup
Amchur powder - 1 tsp
Garlic - 5 to 6 nos

Method

1. Wash and pat dry the bhindi. Cut both the sides and slit it. If it is long, cut into half.
2. Heat oil in a non stick pan and put shallots, bhindi and salt. Saute till the bhindi is fully cooked.
3. In the mean time, dry roast coriander seeds, red chillies and jeera.
4. Blend roasted coriander seeds, jeera, peanuts, red chillies and garlic into a coarse powder.
5. When bhindi and shallots are cooked, add the prepared powder. Mix well.
6. When it is mixed properly, add amchur powder. Mix well and take off from heat.
7. Serve hot with roti.

  2. Whats Amchur poweder..I was trying to mak eit and stuck up at amchur powder..:) ..REGI

    1. Hi Regi,
      Amchur powder is dry mango powder. It would be available in stores. If you are not able to find it, try to add little lemon juice. The taste would be definetly different. But this is the nearest substitute i can suggest. Add lemon juice in the end, mix well and immediately take off from heat.
