Ingredients
Toor Dal (Arhar Dal) - 1/2 cup
Chana Dal - 1/2 cup
Dhuli urad dal (split black gram skinless) - 1/2 cup
Dry red chilli - 4
Curry leaves - 10 to 14
Ginger (chopped) - 1/2 inch piece
Onion (large, finely chopped) - 1
Green chilli (finely chopped) - 4
Asafoetida - 1/4 tsp
Coriander leaves (chopped) - 2 tbsp
Salt to taste
Oil for frying
Method
Note: The oil should not be too hot, because the vadas will change its colour fast, but the inside will be raw and it wont be cooked properly.

Method
- Wash and soak all the dals for 1 hour. After 1 hour drain the water completely.
- Grind the dals coarsely along with ginger, curry leaves, dry red chilli and salt. If needed add little water.
- Put this mixture into a bowl. Now add onion, green chilli, asafoetida and coriander leaves. Mix well.
- Heat oil in a kadai. Take small portion of the mixture, make a ball and flatten it with your hands in the shape of vadas.
- Put this in the medium hot oil and cook till both sides are golden brown colour.
- Transfer it into a tissue paper to remove the excess oil.
- Serve it hot with any sauce or chutney of your choice.
