Ingredients
Boiled rice (i use ponni boiled rice) - 2 cups
Oil - 4 tbsp (use coconut oil, it tastes good)
Water for grinding the rice
Grated coconut - 1/2 cup
Salt to taste
Method
1. Soak rice overnight and grind it with water to a very fine paste. Add salt.
2. In a kadai, add oil and put the ground mixture into it. Put it on a medium flame and mix continously till the mixture thickens.
3. Transfer it to a bowl.
4. With the help of an idiyappam maker, squeeze the mixture into an idly mould.
5. Put little coconut on top and steam it for about 5 to 6 minutes.
6. Idiyappam is ready to serve. Serve it hot with Ishtu or coconut chutney.
7. A healthy dish.
