Ingredients
Chinese Noodles - 200 gms
Eggs - 4
Cornflour - 2 tbsp
Cabbage (thinly sliced) - 1/4th of a medium
Capsicum (thinly sliced) - 1 medium
Oil - 1 tbsp
Soy sauce - 1 tsp
Tomato Ketchup - 3 tbsp
Beans (cut diagonaly) - 6 to 8 nos
Carrot (thinly sliced) - 1 medium
Onion (thinly sliced) - 1 medium
Garlic (finely chopped) - 4 to 5 cloves
Pepper powder - 1 tsp
Ginger (finely chopped) - 1 inch piece
Salt to taste
Vegetable stock as required
Method
1. Boil the noodles as per the instruction given in the packet. Drain out the water and fry it in the oil till crispy. Keep this aside. (I used Chings Hakka Noodles pkt).
2. In a deep non stick pan put some oil. Add garlic and ginger. Saute for sometime.
3. Now add onion. Saute for sometime. Add soy sauce, tomato ketchup. Mix well.
4. Add about 2 cups of vegetable stock. Let it boil.
5. In the mean time, dissolve cornflour in little water or vegetable stock. Add this to the boiling mixture in the pan. Mix well.
6. Add salt and pepper powder.
7. Now add cabbage, carrot, capsicum and beans. Mix well and let it cook for sometime. If required add little more vegetable stock and adjust the sauce as per your wish.
8. When the vegetables are cooked, but crispy, take it off from heat.
9. Make scramble egg by adding some salt and pepper powder and add this to the prepared sauce.
10. While serving, place the fried noodles on the plate and above that pour the prepared sauce.
11. Serve it hot. A tasty and delicious dish for those who love chinese cuisine.
