Ingredients
Maida - 1 cup
Ajwain - 1/4 tsp
Salt - 1/4 tsp
Ghee - 2 tbsp
For filling
Green peas (blanched in hot water) - 1 cup
Oil - 1 tbsp + for deep frying
Asafoetida - a pinch
Jeera - 1/2 tsp
Ginger (chopped) - 1 inch piece
Green chilli (chopped) - 3 to 4
Salt to taste
Garam masala powder - 1/2 tsp
Coconut (scrapped) - 4 tbsp
Peanuts (roasted and crushed) - 4 tbsp
Method
1. Mix maida, salt, ajwain, ghee in a bowl and kneed it into a stiff dough. Add water as required while making the dough.
2. Heat oil in a pan and add jeera and asafoetida. When jeera starts to change its colour, add ginger, green chilli, green peas and salt. Mix well and let it cook for sometime.
3. Take off from heat and put garam masala powder. Mix and set aside to cool.
4. Add crushed peanuts and coconut to the mixture.
5. Heat oil in a deep pan for frying the kachoris.
6. Take some dough and roll it little bit. Put little filling in the middle and join the edges together to make a ball.
7. Roll it again like puris and fry it in the oil.
8. When kachoris become crisp and golden brown, transfer it to a tissue paper.
9. Serve hot with any sauce or chutney of your own choice.
