Ingredients
Basmati rice - 2 cups
Ghee - 2 tbsp
Black Cardamom - 1
Bay leaf - 1
Jeera - 1 tsp
Cinnamon - 1 piece
Cloves - 2
Water - 5 cups
Salt to taste
Method
1. Wash the rice and strain it. Set aside for 20 minutes.
2. Heat the ghee in a deep heavy pan. Add the spices and stir.
3. Add rice into the pan. Stir fry very gently for 2 to 3 minutes.
4. Add water, cover and bring to boil. Simmer covered, till rice is cooked and water has evaporated. Do not overcook.
5. If not cooked, add more hot water and let it cook for some more time, till the water gets evaporated completely.
6. If you are using a pressure cooker, take the double volume of water ie. for 2 cups of rice, take 4 cups of water.
7. Serve it hot either with Chilli Gobi (recipe is included in my blog) or any side dish of your choice.
