Broken Wheat Kheer/ Godambu Nurukku Payasam




When we were young, my mother used to make this kheer every now and then as this is my father's favourite. Even we used to enjoy it :)

Do you know some thing....we used to enjoy this kheer in room temperature along with a piece of spicy lime pickle. Surprised?   Seriously.....I don't know how this combination came up. We kids used to enjoy this kheer with pickle.....that too only with spicy lime pickle. It is really tasty...you should give it a try. Absolutely heavenly.




Last time, when i went to my native place, my mother made this kheer and all my good old memories were refreshed once more. I didn't forget to note down the recipe from my mother, so that i could share this with you. 

My mother usually eyeball the quantity of each ingredients. Even i does that in most of my dishes. But for you all, i have noted down the quantities, so that it will be easy for you. Still, its up to you, feel free to change the quantities as per your taste.




Ingredients

1 cup Broken Wheat/Godumbu Nurukku
1/2 - 1 cup Jaggery (melted, add as per your taste)
1 tbsp Ghee (optional)
1 tbsp Raisins (optional)
2 and 1/2 cup Water
1/2 tsp Cumin powder + Cardamom powder
Coconut extract from 1 Coconut (separate 1st extract and 2nd extract)


Method

  • Wash broken wheat and put it in a pressure cooker along with the water.
  • Let it simmer for sometime. When it whistles 4 - 5 times, switch it off. When the steam is completely escaped from the pressure cooker, take off the lid and check whether it is cooked or not.
  • If not, put on the lid again and pressure cook till it is nicely cooked.
  • Once it is cooked, if you see that the water is more in the broken wheat, drain little bit of water and keep this aside.
  • In the mean time, put jaggery in a pan along with 1 cup of water.
  • Let it melt. Strain it and pour it into the cooked broken wheat.
  • Let it simmer for sometime. Adjust the sweetness by adding more melted jaggery (if you want it more sweet)
  • Now add the 2nd extract of coconut milk and let it simmer for about 3 - 4 minutes. Keep stirring.
  • Add cumin powder and cardamom powder. Mix well. 
  • Now add the 1st extract of coconut milk and mix well.
  • When it starts to bubble, switch off the heat.
  • Serve it hot or chilled.

Note: 
  1. If you are adding raisin, fry it in ghee and add this to the kheer.
  2. Take more melted jaggery if you need the kheer to be more sweet. Adjust as per your taste.
