Spicy Drumstick / Muringakkaya Upperi



This is one of my favourite side dish which I love to have with steamed rice. I got this amazing spicy drumstick recipe from my mom. 



Usually this dish is prepared in coconut oil. This time, I used Fortune Rice Bran Health oil for making this dish. Actually, this dish tastes great even if you cook in any oil. But it tasted awesome with this new Fortune Rice Bran Health oil. This oil has many health benefits and is a rich source of MUFA and PUFA. When I used this oil in my dish, the health benefits of my dish naturally increased and the taste was not at all compromised. In fact it became lot more tastier.



Ingredients

15 - 20 pieces Drumstick (cut into finger sized pieces)
2 - 3 cups Shallots/Sambar onion/Small onion (cut into two pieces)
3 - 4 Dry Red chilli
Salt to taste
3 - 4 tbsp. Oil
Water as required


Method
  • Heat oil in a kadai. Add shallots and dry red chilli.
  • Fry till it the shallots changes its colour. Take off from heat and let it cool.
  • Grind it into a coarse paste.
  • Heat oil in the same kadai. Add the ground mixture and salt into it and fry nicely. (picture shown)
  • Add drumstick pieces into it and add little water.
  • Cover and let it simmer for sometime.
  • When the drumsticks cook nicely, take off the lid and fry till the gravy thickens.
  • Once the gravy is thickened and nicely coated with the cooked drumsticks, take off from heat.
  • Serve it hot with steamed rice or roti.

    1. Ha..Ha...U are right...very difficult to peel off the skin of Shallots. But there is an easy way..Soak the shallots (with skin) in water for about 5 minutes. It would be easy to peel off the skin after that...Hope it helps...This dish is really amazing...A must try :)
