Coconut Cookies


An easy and simple cookies with the rich taste of coconut. As the coconut in the cookies tends to get brown very fast, keep the oven at less temperature ie. 150 degree Celsius and keep checking in between. 




Instead of dessicated coconut i used freshly grated dry coconut (copra). It definitely enhanced the taste of the cookies. 




Ingredients

150 Grams Butter
150 Grams Sugar (powdered)
1 Egg
1 Cup Dessicated Coconut
1 Cup Maida/All purpose flour


Method

  • In a bowl, put butter and sugar. Mix it well using an electric beater. When it becomes creamy add in the egg. Mix it again using the electric beater.
  • Now add the dessicated coconut and maida. Beat well and use your hands to make a dough.
  • Keep it in the fridge for about half an hour. Make small balls out of it and then press gently. Pre heat oven at 150 degree Celsius.
  • Spread a butter paper on the baking tray and place the cookies on it, leaving some space in between.
  • Place the tray in the pre heated oven and bake in convection mode at 150 degree Celsius for about 20 minutes. Check the cookies in between.
  • Once the cookies are golden brown colour, take off from the oven and set aside to cool. After 5 minutes, take it from the baking tray and place them on a wire rack to cool completely.
  • Serve it or store in an airtight container for later use.
