Puran Poli (A sweet dish)


I have made a century, this is my 100th post. I thought i would post a sweet dish and here it is...

Puran Poli is a traditional maharashtrian sweet dish. I have had it in many weddings when i was young. This is usually made on festivals in Maharashtra like Holi etc. I happened to come across this recipe and gave it a try. A very soft flat sweet roti with dal stuffing. The stuffing is known as puran and the outer cover is known as poli. This dish is really healthy. In different parts of the country, it is made in different ways. Some use toor dal instead of chana dal and sugar instead of jaggery. But the one which i have posted here is the traditional way of making Puran Poli.






Ingredients

Whole wheat flour - 3/4 cup
Maida - 1/4 cup
Oil (hot) - 3 tbsp
Water as required
Salt to taste
Ghee as required

For Filling

Chana dal - 1 cup
Jaggery (grated) - 3/4 to 1 cup
Turmeric powder - 1/2 tsp
Cardamom powder - 1/2 tsp
Water as required

Method
  • Wash and soak chana dal for 3 to 4 hours.
  • Mix whole wheat flour, maida, salt, hot oil, water and kneed it to a soft dough. Rub little oil on the dough, cover it and keep this aside.
  • Let it rest for about 4 hours. In the mean time we can make the filling.
  • Pressure cook the soaked chana dal with water and turmeric powder and a drop of oil. Cook it till the dal is just done, not a paste.
  • If water is left in the dal, drain it nicely. Grind the dal nicely and add jaggery. Fry it in a non stick pan on low flame till everything is combined properly and the mixture is dried up.
  • When the mixture (it is called puran) changes its colour and starts to leave the sides of the pan, it is time to take it off from heat.
  • Mix cardamom powder and leave it aside till it is completely cooled.
  • When the puran is completely cooled, make medium sized balls out of it. Keep this aside.
  • Take the dough which you had kept aside and make equal sized balls out of it, ie. each dough ball should have a puran ball to stuff it with.
  • Press the dough slightly between your palms and put the puran ball in it and close the dough so that the dough covers the puran ball completely.
  • Now dust it with some maida and roll again into a thin disk.
  • Roast it in a hot non stick tawa on both sides by rubbing little ghee or butter.
  • Serve it hot or you can store it in the fridge for later use.
