Vegetable Pulav (for beginners)



This is a basic recipe with vegetables and basmati rice with the flavourful whole masalas. A simple recipe for beginners.

Pulav is the most comforting one pot meal. You can try this pulav on those days when you are not in a mood to cook an elaborate lunch. Just serve it with a raita and pickle. You are good to go...

There are many versions of pulav and this one is the simplest and easiest one. Try it out and let me know how you liked it..


Ingredients

2 cups Basmati Rice (soaked for 20 minutes)
1 Carrot (medium, cut into small cubes)
8 French beans (cut into 1 inch pieces)
10 Cauliflower florets
1/4 cup Green peas
2 Onion (medium, sliced)
2 - 3 Green chilli (optional)
2 Bay leaves
8 Black peppercorns
1 inch Cinnamon
1 tsp Shahi Jeera/Caraway seeds
3 - 4 Cloves
1 blade Maize
1 tsp Ghee
1 tsp Oil
Salt to taste


Method

  • In a bowl, boil 4 and a 1/2 cups of water. Keep this aside.
  • Heat oil and ghee in a big non-stick pan. 
  • Now, add bay leaves, cinnamon, black peppercorns, cloves, maize, shahi jeera.
  • Add onion and green chilli. Saute till it turns golden in colour.
  • Now add carrots, cauliflower florets, french beans and peas. Mix well.
  • Saute for a minute and add the soaked basmati rice.
  • Mix gently or else the rice will break. Now add the boiled water.
  • Adjust salt and mix gently.
  • Cover and let it cook for about 15 minutes or till all the water is absorbed by the rice and it is nicely cooked.
  • Switch off the flame and without removing the lid, keep it aside for 5 minutes before serving.
  • Before serving, use a flat spoon and gently pull out the pulav from the sides. Don't over mix or else the grains will break and the pulav won't look good.
  • Serve it hot with any raita of your choice.
 
 Note:
  1. I added little bit of soya chunks to the pulav for a different taste. You can go ahead and add your favourite veggies or even paneer pieces in it. 




* I usually take the quantity of the ingredients as per my taste. So you can always adjust the spices as per your taste*
